Super Styrian brew

This will be my first go at making my own recipe i'm asking what's everybodys thoughts on what yeast to use.

M.O. 5.0 Kg
Crystal malt 700 g
Chocolate malt 100g

Aurora 8.1 40 g 90 mins
EKG 4.6 20 g 70 mins
Bobek 5.2 15 g 60 mins
Bobek 5.2 15 g 30 mins
Bobek 5.2 15 g 15 mins + Protafloc tablet.
Bobek 5.2 5 g 0 mins

Then either S-04 or Nottingham

Thanks for any advice.

id go with S-04, and save the nottingham yeast for pale/blonde ale, but thats me .. :lol:

Personally, I'd drop the amount of cystal to about 300g or so - I think at 700g it'll be a bit cloying?

Not sure what sort of beer you're aiming for here . . . as the recipe stands, I think it'd produce a very well hopped strong dark ale. I'd just use 3 sets of hop additions, 90 minutes, 15 minutes and 0 minutes personally. I think that the others aren't really going to give you any benefit.

As for the yeast, well with that many hops going in then (to me at least) it'd seem daft not to let them shine through, so I'd plump for Nottingham. The latter will also munch through some of the malt a bit more than S04 would too.
