Cherry beer

Post by tubby_shaw » Wed Dec 20, 2006 5:58 pm

I was in Lidl today buying more apple juice  and I came across jars of morello cherries in syrup for 99p a jar, ingredients cherries, water sugar syrup:idea: cherry beer
Has anybody yet made a "sucessful" cherry beer? If so how?
My idea is to brew a small 2 gallon batch using 2.5lb pale malt and 12oz wheat malt with 1/2oz goldings for a 60minute boil adding the syrup from the jars to the boil. I would store the cherries in the jar with 1/2 campden tablet in each and add these cherries to the secondary fermenter.
I am aiming for a pale beer which should pick up the colour of the cherries and I am hoping for around 5.5 to 6% alcohol.
Should be nice as a desert beer after a bbq =P~

What about doing a 3 gallon batch and with the spare gallon dump a jar in the secondary and see how it turns out.

The jar contents weigh 750g with 350g of that being fruit, so I think it's back to Lidl for more cherries :)
I just hope I can stay away from the apple juice :D

I have been planning on making a cheery stout for quite some time. I can't remember why I didn't make it...

Currently I have just under a kilo of cherries which have been in the freezer for quite some time (well, since summer). I thikn I'll put together a recipe and make it in the near future :)
