Only making a small batch for father in law and me for supping over the holidays so only want around 10 bottles.

An IPA fermented with S-04 is like gravy made from Bisto. I'd use UK-05/Safale-05 if you want to taste the Amarillo and Cascades. I'd also drop the cinnamon stick.

Thanks for the feedback, I was thinking of using US05 so I will now. But really wanna keep the cinnamon stick in it.

Keep the stick in and make it festive!.............the brew as it stands sounds like a winner, probably slightly sweet tasting and a big hit of citrus frome those hops, one of my favourites

I'm really looking forward to trying a brew with some Munich malt in, yours looks good.

Sounds great... although I've got no idea how cinnamon would work with the hops. At first glance I'd reckon it should balance with the sweetness of the malt... I'm intrigued to hear how that works out. Nice selection of hops there though. I can almost smell it from here 
From personal experience - I've never had much luck dry-hopping with Cascade... always ends up really grassy! I find the last 10 min of the boil works best for me, and then dry-hopping with something like Goldings. That might just be my bad luck with hop suppliers though.
