Irish Stout

Post by eskimobob » Sun May 28, 2006 8:12 pm

Here is my Irish Stout recipe for a 19 litre batch:
2500g Pale malt
400g Roasted Barley
1000g Flaked Barley
57g Fuggles (for last 60 mins)
5g Irish Moss (for last 15 mins)

Mash for 90 mins at about 64C
Boil for 90 mins
Original gravity 1038
Final Gravity 1012
IBU 32
Efficiency 85%
White Labs (WLP004) liquid yeast

Edit: Updated the FFF link
Here's a link to my brew day with this recipe.

I'm planning on brewing this again shortly; this is going to be my stock stout permanently on tap :) :)

Will my stout come out looking as creamy as that if i'm bottleing, or do you only get it looking like that if you use a cornie setup.

With that much flaked barley, you'll get good head retention on your bottled beer - but more like bottled Guinness than the nitro type head.

Hi EB, nice looking recipe (and nice looking pint!). Have you tried putting some chocolate malt in your stout?

Hi Niall,

No, I've not tried the chocolate in the stout. I'm actually planning to do this stout again in the next few weeks but I'm going to replace some of the flaked barley with some Cara-Pils; currently I have a bit too much head formation occuring  and fancy seeing what the Cara-Pils does to it

I do really like this recipe though and always seem to get good comments from those that try it.
Edit: Just updated the link above as it was pointing to ForumForFree and was defunct.

EB, CaraPils does almost exactly the same job as flaked barley. I usually throw in 3 or 4 hundred grams of CaraPils to my recipes and it really helps the head retention.

Your stout looks great, anyway 8)

Ah, I see. Well we'll see what happens then... Longer head retention would be a good outcome but I won't get my expectations up too high.

either you've made a mistake with the recipe (unlikely)

or he's killed his taste buds off with 20 years of vindaloos
