I have posted beforeregarding an IPA that i wanted to store for several months before drinking. I have played with beersmith and have at last come up with a recipe.
Here goes: 15 l brewlength based on 75 %
Pale 3520
Light crystal 345
cara-pils 200
torrifies wheat 250
HOPS
22g target ( 13 %) for 60
35 g Fuggles 8 4.1%) for 10
20 cascade (5.5%) for 5
25 g Fuggles ( 4.1) for 5
35 fuggles (4.1%) at flame out
30 g Cascade (5.5%) at flame out
Might add a little chocolate in here for a bit of a darker colour.
yeast wyeast 1968 with around 1 l starter
This gives me an OG 0f 1066 and an estimated FG of 1020 making a beer of around 6.06 %
Total IBU is 56.3 Although i might also dry hop this.
The idea is that this will sit in bottles from around the end of jJan and be drunk in around mid to late june.
Should i up the IBU to 60? or will this prove tastey enough.
Brewday is going to be around 16th Jnan when the yeats comes. I also have the alternative of using Notty or Safeale 05

Looks good to me. The amount of hops you use is purely personal and how generous you feel on the day. I can say that i made a 135IBU IPA in July and its perfect(you know what i mean) right now so that's 6 months conditioning and all excessive bitterness is gone leaving smoothness and a massive hop aroma. You can think big with these beers if you want to! Also if you can it would be worthwhile to up your brew length a bit as 6 months is a long wait for 30 bottles especially if it turns out to be great.....

Looking good matey. Are you planning on making your starter from one smack pack? If so I would consider a 2L starter for a beer of this gravity.

I have some challenger, masses of target, and i have some northdowns too.
I also ave some Halletuer hops ( I thik that’s right) and some goldings.
I am thinking that I might increase the IBU to nearer 65 to be onest . 5 months in the bottle should be great and I am hoping to dry hop with cascades so that you get hit with the hop when you open it.
With regard to the yeast, I am not sure. It depends on what comes through first. I have an order from barley Bottom that is stuck in the post at the moment. This has a few packs of notty, some safeale 04 and 2 packs with 05.
Initially I was hoping for the 05
I ordered the 1968 yeast as a back up really and will be able to use it in another brew if not. I guess a 2 l starter will need a week or so to make ( and I have to find a jar big enough!!) and unless the yeast arrives this week it will likely be the dry yeast that gets used.
UK-05 as I understand it takes a time to slear anyway so months in the bottle together with some heft hops should be ok.
That being said I tasted a norwegian “ english IPA†over christmas. It has 70 IBU and was overpowering . the hops used were without doubyt EKG and Likely cascades.
The reason for the 15 liter brew length is that this is designed for the christening we have in the summer so I want to be able to keep it.!

having just checked the order i have actually ordered an XL in the smack pack which is 125 ml.
The blurb says that this is enough for a 40 liter batch, but taking into account all the good advicefrom Chris before i'll make around a 1 l starter with this. Will start with 300ml of 1040 ish wort and step it up to 1 l
i'll likely smack the pack on the day i get it and can always just split it if i have to wait to brew.
