Nelson Sauvin IPA

"Nelson Sauvin" American IPA

I just opened the last bottle of this, made in June 2008. Clean ale flavours due to the use of American Ale yeast strain (Wyeast 1056) but what a punch of pineapple and grapefruit from those hops. It's bloomin marvellous, give it a try!

O.G. 1.054, produced about 25l

6kg Pale Malt (Golden Promise)
600g Crystal Malt

50g Northdown, 60mins
44g Nelson Sauvin 15mins
28g N.S. 5 mins
14g N.S. on flame-out (steep about 30 minutes while cooling)
14g N.S. dry hop, for about 1 week.

Mash: 8.5l water at 46'C dough in, 20 minutes;
Add 13l at 90'C for a 65'C saccharification rest, for 1 hour.

Yeast: WYeast 1056 in a 3l starter cultured from previous brew.

Yeah - that'll work! Great hop.

It's always those "last bottles" of old beers that have matured for a while that taste so blooming marvellous that they make you go and do the same brew again. I think there should be a rule that you give one bottle of each brew to the missus and have her hide it away somewhere for a year or so, then bring it out as a surprise for you.
