Hmmm - well you've brewed it now buy from reading LOTS recently on belgian beers and planning a few my guess would be:
pils as base or belgian pale ale malt (I'd use pale MO from Thomas Fawcett as it's malty like belgian pale but pils colour)
biscuit malt
aromatic malt
Then potentially acid malt, or another belgian malt like honey (the ;farmhouse brewers' use a decent mix of interesting malts)
Light candi sugar (make it, don't buy it, way overpriced and easy to make - see http://oz.craftbrewer.org/Library/Metho ... andy.shtml or just use white cane sugar -
Fuggles (spicy) + Styrian Goldings (citrussy) and then hersburcker or saaz for the floral notes...
Orange peel (Randy mosher suggest marmalade or using peel of a real orange rather than curacao)
coriander seeds
Would HIGHLY recommend reading 'Farmhouse Ales' and also ']Brew Like a Monk[/url' (and [url=http://www.amazon.co.uk/Radical-Brewing ... pd_sim_b_5]Radical Brewing by Randy Mosher which is inspirational and a brilliant fun read) to get a good handle on these beers... Moinette produce STUNNING beers - love their saison and pale.
Belgian's won't give out recipes, and rightly so IMHO as they throw out the rule book and take an artisan approach - it's not about impersonation but inspiration and making something unique - hope your one is!

Steve you hit the nail on the head with the style. I was thinking for a modern twist which could sell. But a few extra points noted and may make some change if things go pear shaped.
