It depends on what you want out of that recipe. If you would like to end up with a nice malty brew that recipe is spot on. If you would like more hop bitterness, I would up it to around the 35-40 ebu mark.pdc wrote:do i go more bitter???

I've tasted some of the running and they are seriously nice.
I'm going to stick to my original plan and aim for 30IBU.
My efficiency has gone through the roof mind. Early signs are for a 1075ish SG!!!
May have to water it down a bit.

Hope you like Amber malt, thats a lot of amber with very little dark malts to cover it up.
I'd be tempted to knock off 500g, I have a crate of my least favourite beer in the cellar made with 20% Amber malt and its a bit of an acquired taste. If I made it again I'd only add 5 or 10%.

was it a bit too much from the end of fermentation? I've just bottled up and from what i've tasted i think it might be a good 'un. It is very sweet so that might be masking any harshness from the amber - i'll just have to wait a few weeks...

Its a very distinct flavour, had it right through from Just bottled to fully matured and aged.

I'm still not convinced about Amber malt......I find it's very acrid in a young beer - and take ages to mellow out. Having said that, after 6-8 weeks or so, it adds a nice flavour.

Update...
Out of the fermenter Into the bottle - it tasted pleasant and was quite distinctive
One week in - smell not too pleasant - taste very harsh in fact quite undrinkable
One month in - smell fruity and distinctive probably the Amber - taste harsh but could drink a pint and no more
Two months in - smell fruity and distinctive - taste rich and complex very drinkable I had three in quick sucession
looks like a brew that will benefit from an extended maturity period.
I'll report back in a month...

Any news on this one Phil. I think I was a bit hasty buying 5kg of Amber malt at the last bulk buy. Fancy this recipe to try help get rid of it!

Out of 50 pints i have 0 left.
Definitely distinctive but pleasant and got much better with age.
I drank the last one last week it was the best, so I'd say mature it for as long as possible.
Admittedly it is not a big drinker, one to three pints and had enough as it seemed to be quite filling.
Like you I've got a lot of amber - i've used it in smaller quantities as a replacement for crystal which works very well since I don't particularly like crystal.
I think amber is probably like marmite, you'll love it or hate it
