something lighter
i have one last batch to brew before the christening.↲I would like something fresh and not more than around 3.8 in strength.↲I was thinking a pale only brew with maybe a little wheat for head retention.↲ my first thoughts are to hop with challenger and northdown to around 24 ibu, but i have some centenial and cascades too.↲Will be using wyeast 1335.↲Any thoughts?

I'd make it a bit hoppier than that. You won't have a lot of flavours from the malt so it will need something otherwise I think it'll turn out rather bland.

I'm going to do a summer-ish beer myself in the next few days. Bittering will be to 30 EBU with 50/50 Northdown and Pilot and aroma will be Goldings.

IBU's around 30 sounds good and will be tasty to the initiated while not being too much for the occasional ale drinkers...
I quite like Centtenial & Cascade in Pale Ales, but they are not to everyones taste... They may be too citrusy to the un initiated (and those who dont favour US hops)
Challenger & Golding is a good combination or the Challenger and Northdown for bittering and a 10 minute Northdown is also a good one in a pale ale - there are many commercial examples
The wheat malt will add an attractive head, especially so to northerners!

centennial and cascade are a fantastic mix id stck to about 30ibu and massively late hop with both, up to 168g per 10 gallons(84g of each,42 @ flame out and 42 @ flame out +30 on a 1 hr steep )halve the quantities for 5 gall batches

after looking at what i have it appears i do not have enough for a pale only brew.↲I'll use 93% pale and 7% light crystal. Will hop with fuggles and goldings at 60, 10 and flame out.↲Will be about 3.6 and 32 ibu. Yeast starter is just made, should be a light copper colour i think, don't remember the ebc of the crystal. . . Brew day friday. Pics will be posted naturally:-) thanks all.

Well .. this is all bottled up and has been cold conditioning for a week or so. I'm thinking i might try a bottle middle of next week. FV samples showed it to be more bitter than i had thought initially but this is the first time i used goldings and fuggles together . I know that fugles rounds off quite wuickly so I am optimistic about this one,.Manx Guy wrote:Bump!

This turned out to be a cracker.
caramel, and hops. it's only been bottled for 3 weeks as well so in another couple of weeks it'll be spot on.

I like using Northdown as an aroma hop, on it's own or mixed with challenger. Made a Butcombe type bitter recently with both those as late hops, a light easy to drink beer and the hop flavour was superb.
