Recipe using cascade and goldings?
Recipe using cascade and goldings?
Anyone got a recipe using both? Do they work well together?
Re: Recipe using cascade and goldings?
In theory they would work well together I think. Do you have any idea's on the style of beer you think you would like?
Re: Recipe using cascade and goldings?
My Poplars Pale MKIII recipe worked out very well. You could sub out the fuggles for an all goldings boil addition.

Re: Recipe using cascade and goldings?
can you get your hands on the new Delta hop
Harpoon Brewery has this

I`m looking to get some over here, sounds interesting
as for the cascade/goldings I think cascade goes great with everything just dont overdo it as it can get overpowering in the aroma
Cheers

Re: Recipe using cascade and goldings?
I haven't tried this, but what I would do is the opposite of what leedsbrew suggested above, i.e. use the Cascade for bittering and the Goldings for aroma.

Any reason for that IS? I've made my recipe a couple of times and it's a cracking summer ale!

Re: Recipe using cascade and goldings?
I'm sure it's great, but I don't see why you would choose a very subtle low-alpha hop for your bittering addition! Can you taste the Goldings? Don't they get totally swamped by the Cascades?leedsbrew wrote:Invalid Stout wrote:I haven't tried this, but what I would do is the opposite of what leedsbrew suggested above, i.e. use the Cascade for bittering and the Goldings for aroma.

Re: Recipe using cascade and goldings?
Personally i wouldn`t use them together as both are nice as aroma hops,
(thats not to say you shouldn`t have a go though)
why not bitter with something like target or challenger, challenger and cascade work really well together,
better than all cascade, mind you all challenger is also a nice brew, think Conistone Bluebird Bitter

Re: Recipe using cascade and goldings?
OK, Thanks all for the input. I'm restricted by the ingredients I have. My original plan was to make something using only cascade but I don't have enough to get to the kind of IBU's I fancy (around 40) so I am going to use some goldings to up the bitterness. I fancy a distinct cascade aroma in a light summer ale. I put the figures in to Beer engine and came up with the following (black malt purely for colouring):
AG No 2
Date:
Gyle Number:
Fermentable Colour lb: oz Grams Ratio
Wheat Malt 3.5 EBC 1 lbs. 7.2 oz 660 grams 10%
Pale Malt 5 EBC 12 lbs. 13.5 oz 5830 grams 88.2%
Crystal Malt 130 EBC 0 lbs. 3.5 oz 100 grams 1.5%
Black Malt 1300 EBC 0 lbs. 0.7 oz 20 grams 0.3%
Hop Variety Type Alpha Time lb: oz grams Ratio
Cascade Whole 5.7 % 90 mins 0 lbs. 1.4 oz 40 grams 30.8%
Cascade Whole 5.7 % 20 mins 0 lbs. 1.1 oz 30 grams 23.1%
Cascade Whole 5.7 % 10 mins 0 lbs. 0.7 oz 20 grams 15.4%
Golding Whole 5.7 % 90 mins 0 lbs. 1.4 oz 40 grams 30.8%
Final Volume: 40 Litres
Original Gravity: 1.040
Final Gravity: 1.009
Alcohol Content: 4% ABV
Total Liquor: 53.6 Litres
Mash Liquor: 16.5 Litres
Mash Efficiency: 80 %
Bitterness: 40.0905373880692 EBU
Colour: 14 EBC
I may need to mess around with the weights once I check the alpha % of the hops I have, but you get the idea. Any thoughts on the recipe?

Re: Recipe using cascade and goldings?
I know it's not quite what you are asking, but, I have just done one with northern brewer for bittering (less than 10g) and loads of cascade later. Although a little unorthodox (as goldings are normally a late hop) you can simply use them to boost the bitterness by using them for the full boil. I tend to use very little early hops now and just get the bittering from the larger amounts of late hops. The predominant flavour will be cascade if you go as described.

Re: Recipe using cascade and goldings?
I`d also do away with the black malt,i know its for colour but dark malts when used in small quantities tend
to leave a funny taste, as its neither or if you know what i mean, i know i did it with 2 brews back to back and
i`ve still got one left as its quite an unpleasent drink, but i`m slowly getting rid of them
I`d also be carefull with the Crystal as the caramel flavour of Crystal doesn`t go well with the citrus of Cascade,
I`d say the paler the beer the better for Cascade, when i brew mine i only use pale malt,Challenger and Cascade,
I`ve tried alsorts of combinations with Cascade and to be honest they are really a pale beer hop.
But please dont let me put you off, as there will be some sort of combination that will work

Re: Recipe using cascade and goldings?
well, I went ahead and brewed it. Tasted very special going into the FV . Decided to stick with the small levels of black and crystal on the basis that I love Sierra Nevada Pale Ale and that is a darkish beer that uses Cascade. Anyways, it stills looks very light, just not as light as it would've been with 100% pale. Using SO4 yeast. I'll let you know how I get on
