Wheat Beer recipe

I've got an unexpected day off tommorrow and wanted to have a go at a Wheat Beer.
From what I have in stock I've come up with this:

Pale Malt 5 EBC 4 lbs. 6.5 oz 2000 grams 42.6%
Wheat Malt 3.5 EBC 3 lbs. 11.9 oz 1700 grams 36.2%
Caramalt 30 EBC 1 lbs. 1.6 oz 500 grams 10.6%
Carapils 2.5 EBC 1 lbs. 1.6 oz 500 grams 10.6%

Hop Variety Type Alpha Time grams
Hallertauer Mittlefruh Whole 4.3 % 90 mins 20 grams
Hallertauer Mittlefruh Whole 4.3 % 10 mins 20 grams

Yeast: S-33
Final Volume: 23 Litres
Original Gravity: 1.046
Final Gravity: 1.011
Alcohol Content: 4.5% ABV
Total Liquor: 33 Litres
Mash Liquor: 11.8 Litres
Mash Efficiency: 75 %
Bitterness: 12.9 EBU
Colour: 11 EBC

Any comments out there? I've seen lots of recipes but none that match what I've got in the cupboard. Could this produce something good, or does it need adjustment? (or starting from scratch?)

I'd go for 50:50 pale and wheat - weizen recipes are quite simple really - the caramel malts might make it a bit cloyingly sweet. If you're gonna add any speciality malts, I'd go for a bit of Vienna or Munich if you have it.

Nothing wrong with your recipe, but I'd also go for a simple 50:50 pale (or pils)/wheat mix, and use a fruity-type wheat beer yeast, but that may not be what you are looking for, or have on hand.

Thanks both. I'll skip the Caramalt to avoid the sweetness then.

Have you got any torrified wheat in stock? Could boost your wheat percentage with that if you do...

Maybe even drop the flavour hops too as hop flavour is usually minimum (for Weizens anyway) What yeast you going for?
