Summer Grapefruit

Any thoughts on this? I'm going for a golden ale with big citrus/grapefruit with loads of hops and a smooth mouthfeel (hence wheat and munich).

Will this work?

Wheat Malt , 3.5 EBC, 850 grams, 10%
Maris Otter Pale Malt, 2.5 EBC, 7230 grams, 85%
Munich Malt, 20 EBC, 425 grams, 5%

Chinook 12.7 %, 90 mins, 5 grams
Chinook 12.7 %, 10 mins, 25 grams
Cascade 7.6 %, 10 mins, 75 grams
Amarillo 9.5 %, 10 mins, 75 grams
Chinook 12.7 %, 80 degree steep, 25 grams
Cascade 7.6 %, 80 degree steep, 50 grams
Amarillo 9.5 %, 80 degree steep, 50 grams
Chinook 12.7 %, dry hop (secondary - 1 week), 25 grams
Cascade 7.6 %, dry hop (secondary - 1 week), 25 grams
Amarillo 9.5 %, dry hop (secondary - 1 week), 25 grams


Final Volume: 40 Litres
Original Gravity: 1.046
Final Gravity: 1.011
Alcohol Content: 4.5% ABV

Truckers Delight is a beer on the same flavour line. You are throwing a lot of hops at it! That's not a criticism I love a big hitter. Truckers Delight is lighter on the hops and almost all cascade. You should have a cracker there, Fallen.

If you want grapfruit, you will get it with that recipe. If I were doing that, I think I would swap the Chinook for a hop with a bit smoother profile, I have had really good luck with Warrior. I am not a big fan of Chinook hops although Stone Brewing is getting rich featuring that hop in their beers. Of course, alot depends on what your water profile is like. I have medium hard water so I have to be a little careful with the hops because water like mine will tend to add a somewhat harsh aspect to the bitterness if I am not careful. The other thing I have been using lately is one of those Jamil immersion chillers. The reason I built one is because I make a lot of lagers and it allows me to get the wort really cold, really fast. The other benefit though is since it lowers the temperature of the wort so quickly, it also traps alot of late hop flavor and aroma. I used the thing on the Ballantines XXX ale I recently made and that stuff has a gigantic hop presence, it really works well. By the way, once you make this beer, you should send a bottle over to the Badger, everyone know how he loves his American style hoppy beers.

Conditioning: Traditional bock bier, CAP

Next up: Bitter (London Pride like), ESB

:lol: I'd definitely think about doing that . If it's not perfect I might just waste a bottle and send it in his direction. I might even call it a traditional english ale, that'd really throw the cat amongst the badgers :twisted:

It's a big hop monster which, at that gravity, might be OTT. However, I've tried to keep the EBUs below 40 and relied on late hops which should smooth out the bitterness further. There's only 5g of Chinook going in for 90 minutes. The rest going in late.

Ah well, I can tone it down for v2 if needed!

I'd I might go with Centennial in place of Chinook for the late additions, at least. I love the grapefruit myself!

i use predominately chinook in my liverpool pale ale, that has a very strong grapefruit flavour. sells well too :D

Mysterio seems to think Chinook is a good dry hop. This is the first time I'll have tried it. Why would you use Centennial instead?
