Recipe Help....

Hi guys i am going to brew a light easy drinking ale and i want to try the dry hopping technique here is a list of the ingredients i have to play with any reccomendations would be great!

Lots of Maris Otter
Munich Malt
Crystal Malt
Torrified Wheat

I have a choice of these hops - Amarillo, First Gold, Pacific Gem i also may have some fuggles and challenger left over from last brew...

Let me know your thoughts of what i should use! Cheers Billy x :twisted:

Well this has just come out of my fermenter and is tasting great, and you have all the ingredients for it

Amarillo Gold:

4500g Pale Malt
500g Wheat Malt (sub for 250g Torri)

50g Amarillo/50g First Gold mixed for the hops:

30g 15 minutes
30g 10 minutes
20g 5 minutes
20g flame out

You could probably make the hop schedule simpler but TBH i am just hanging around for the last 15 mins of the boil so it's good to have something to do.

Dave, is that hopping schedule correct? It looks to be quite lacking in bitterness.

You'd be surprised. It's tasting more bitter than i expected out of the fermenter, although that will probably fade some.

The idea is that it's a fresh ale, with lots of flavour.

If you'd never tried leaving out the bittering hops, and just chucking loads in at the end, try it - it's great IMO.

The IBU is about 25 but it has loads of flavour. If you like really bitter ales then perhaps it's not for you, but this is a thirst quencher.

Awesome thanks for the recipe sounds yummy! Anyone had any experience with dry hopping im not sure on how much you add!

Yes, some experience. In the past i've dry hopped in primary, after initial fermentation has died down, and left the hops for 5 days.

I used about 20g, but of course it depends what the hop is, and what you want to do.

Add 100g if you like! 10g would probably be a minimum for me, to make it worth the while.

Ultimately, i think i prefer post-boil steeping to dry hopping though. It's less hassle and the effect is as good IMO.

I use Dave's method a lot. If I use any early hops it is only in higher bitterness brews. Most of my brews are now late hopped with a little more hops. I stock something like Northern Brewer for their high AA and maybe use just 5g at 75 mins. "Truckers Delight" was brewed with this method and was consumed by the 14th day from pitching the yeast :shock:

I was thinking of after the primary fermentation for 7 days transfer to secondary and then add the dry hops for 5 days then keg. :idea:

That will be fine..................the only way to find what suits your own taste is to do it. RECORD EVERYTHING. I do lots of stuff that others would be horrified by. It works for me and guess who drinks the beer?...............Remember it's hard to make a bad beer!

Brewing currently and decided to try something made up i went with 15kg maris otter, 2kg munich malt

Hopping schedule is 90 mins - 100g first gold + 70g fuggles
@ 15 min going with some amarillo probs 100g

i will dry hop with poss some saaz not sure yet...

This is a large brew probs gonna end up with 100L got some nottingham yeast to try this time round. :D
