Plenty of Hallertau
Plenty of Saaz
Salflager S-189
Salflager S-23
Going forward I'll be buying ingredients specifically to make certain beers based on recipies - but before I do that I want to use up the stuff I already have. Anyone care to recommend a beer(s) based on what I have? I prefer lagers, although thanks to being in London I have a greater appreciation for bitters and ales now. (In fact I'm thinking of trying to make a London Pride clone for my next beer).
I should add: I do 5-gallon (19L) batches; I'm obviously not doing all-grain. My main brew pot only fits about 10L, so I usually do partial boils of about 2 gallons or so, topping up as I go along, then topping up to 5 gallons after cooling the wort.

That is screaming Oktoberfest/Marzen at me, I would use all of the vienna and lager malt for a 5 gallon batch, then you'll need to boost the gravity up to 1.055 or so using the DME. So if you target a pre-boil (90min) gravity of around 1.050. Bitter with the NB to 20 - 30 IBU then throw in some Hallertau at the end of the boil. Rehydrate and chuck in the s-189 and ferment at 10 C.

mysterio, that sounds great - problem, I only have a 10L pot. I doubt I'd be able to fit 9lbs (about 4kgs) of grain in there and actually have room for water. Any suggestions? Maybe just make a smaller batch?
Would the recipe be something like this?
Heat approx. 9L of water to about 68-69°C
Put in grains, keep at 65-66°C for 45-60mn
Remove grains, top up pot by pouring water over grain bag; discard grains
Bring to boil; add 1Kg of DME and about 20g of NB hops
After 30m add 10g of NB hops
After 57m add 10g of Hallertau
Chill, top up to 19L, add the S-189.
Does that sound about right?
