Is it a Hefeweizen you are after or a wheaty bitter?

If it is a Hefe, I would go for the following:

OG around 1050.

50% Pale Malt
50% Wheat Malt

or

40% Pale Malt
60% Wheat Malt

A single addition of Hersbrucker for 90 mins to 15 EBU

Ferment with a proper Hefe yeast, such as Wyeast 3068 at around 18 degrees, and bottle.

Dont be tempted to use dried yeast, it doesnt produce the right flavours.

Or if you want a light, white one like Hoegaarden, use flaked wheat, not malt.

Zapp Brannigan's suggestions are a very good start; 50% Pils, 50% Wheat Malt, mash at about 67C, German noble hops to about 15IBU and a Weizen yeast fermented as cool as you can get it to work (17-18C).

The version I have in my fermenting fridge right now is based on a translation of "Almtaler Hefeweizen": 50% Wheat, 40% Pils, 10% Munich, step mashed (43-62-72C), the recipe wanted Tettnanger but I used Mt Hood (since it was what I had in the fridge).
