Here is the second of the Winter brews i am doing. I am basically making something along the lines of other winter warmers without spices and trying to use hop combinations i know and enjoy.

Here are the fermentable for a 22 litre brew.

pale malt 75.4%
Aromatic malt 6.7%
dark crystal 5.7%
torri wheat 3.8%
brown sugar 8.3%


Fuggles to 28 IBU at 60
Goldings to 5 ebu at 10

Will be aiming to capture som youngs yeast from a bottle i have in the garage at the weekend and will try to make this up to a 1.5 litres starter. All being well this gives me something along the lines of 6.5 % and 32-33 IBU. I might add some more hops to bump this us a bit.
Any thougts?

Although i intend to keep the main base of the grain the same i do have Munich and carapils as well. Wonder if i should have any of those in, and drop some of the sugar?

I also have a bunlde of other hops, Centennial, cascade, willamette Chinnokk, aroura styrian goldings, bobek etc.

I am making the starter at the weekend and once this is started there is no way back.... Any thoughts regarding the above would be greatfully received:)

another small bump. . I'd really like the hop and malt to compliment each other. i am also thinking centennial and cascade but not sure on schedule.

For a Christmas type of beer I would be tempted to go for a bit more hop impact. Cascade and the Chinook should give a nice citrus tang to it. You could leave the fuggles as they are and use about 25g of cascade and perhaps 10g of chinook (depending on the AA) at 15 mins, then another 25g of cascade at 5 mins. That should give a Christmas sort of theme without resorting to fruit and spices :wink:

I have had a play and come up with something else in regards to the hops. The grain bill will stay the same, although i might add a little black just to redden it a bit.

Other thatn that i have changed the hops around and used all c hops.

22 grams centennial ( 11,4) at 60
20 cascade ( have to check the aa so this might vary a little) at 15
10 grams chinook (10.4) at 15
20 cascade at 5

I have never used any of the hops before and have always wanted to have a go.

this will give me 37,8 IBU in a brew that has an estimated og of 1067.

Hopefully the hops and malt will balance each other out and not be overpowering either way.

any more comments?
