They is a good recipe for acholic ginger beer in the craft brewing book i can't quite remember the guy who wrote the book but he says to add anywhere between 300g to 500g of stem ginger to the boil depending on how spicey you want it. What i would is add 300g of stem gnger at the start of the boil then add another 100g of stem ginger either last 10 mins of the boil or you could add it post boil and soak either half hr or a full hr.The last 100g i would dry hop it and add it in the barrel or condtoning jar, One last thing if you add the ginger into the boil i would put the ginger into a muslim bag or a hop sock that way it won't block the tap on your kettle.I have also been informed a good hop for a ginger beer is first gold it has good alpha and a good spicey aroma when added late in the boil.So my fnal word is make up a good bascic pale ale recipe and then add the ginger in with the recipe. hope this helps&happy brewing
