Hi, after my last autumn brew went surprisingly succesfully (a molases porter thing) I'm thinking of something new for the winter. Something warming but with a little spice... so here are my thoughts as I piece this together.
I've not tried to make an IPA yet, but maybe for the winter I might give one some colour and a little extra maltyness.
Is crystal malt the way to go? I tried caramunch for a pale ale I made which was very nice. I might track it down some again? I also have some Rauchmalz which I haven't tried yet... not so sure about smoking this tho.
Hop wise, I have Fuggles, some Styrian Goldings, a little Amarillo and Galena but could try something new.
I've always liked Martsons Old Empire which is simple Fuggles/Styrian? But for this I could do with a little more fruit, thinking Punk IPA without so much bite perhaps? I see they use Chinook, Simcoe, Ahtanum, Nelson Sauvin none of which I've used before.
How about, Bittering - Fuggles + SGoldings
Flavour - Something fruity + SGoldings
Aroma/Dry Hop - Fruity thing + Amarillo
Mmmm looking forward to going to the brewshop now:)

Ok, so I bought some Cascade in the end, what the brewshop happened to have.
Here's my idea so far...
Pale Malt 5 EBC 11 lbs. 15.8 oz 5440 grams 91%
Crystal Malt, Pale 60 EBC 0 lbs. 10.5 oz 295 grams 5%
Crystal Malt 130 EBC 0 lbs. 8.4 oz 235 grams 4%
Fuggle Whole 4.9 % 90 mins 0 lbs. 1.5 oz 42 grams 42.5%
Fuggle Whole 4.9 % 30 mins 0 lbs. 0.4 oz 10 grams 7.2%
StyGoldings Whole 4.5 % 15 mins 0 lbs. 1.8 oz 51 grams 21.7%
Cascade Whole 5.5 % 10 mins 0 lbs. 1.4 oz 40 grams 15.4%
Amarillo Whole 9.5 % 10 mins 0 lbs. 0.7 oz 20 grams 13.3%
Will add Cascade or Styrian Goldings to steep and/or dry hop
Final Volume: 23 Litres
Original Gravity: 1.058
Final Gravity: 1.014
Alcohol Content: 5.7% ABV
Colour: 25 EBC
So I guess it's a traditional IPA to start with then an american one to end:) I would like to have something notably hoppy and fresh tasting with good kick but not leave you feeling like you've eaten a bag of leaves...
Planning to brew this tomorrow, will no doubt change my mind a minute before the stuff goes in:)
