Speckled Rat Thunder

I'm testing out something I'm working on and have come up with this recipe:

Pale Malt - Marris Otter: 5429g
Caramalt: 346g

Cascade (90 Mins): 10.9g
Cascade (30 Mins): 15.2g
Cascade (15 Mins): 23.6g
Cascade (0 Mins): 16.6g

Nottingham yeast

OG: 1.058, FG: 1.012, 6.0% ABV
EBC: 9, IBU: 18.

What I'm after is something that is quite striking, flavour-wise, nice and fruity but not too sharp or heavy. I've never used Caramalt before, so I'm not sure if it's the right thing for that. It's supposed to be quite sweet, AIUI. Anyone got any thoughts?

This is my Yorkshire Gold, 5.25 kg Thomas Fawcett Golden Promise and 200g Caramalt.

The Caramalt I use is 20.3 SRM ( about 40 EBC) - check the specs of the one you are going to use and that might give you a guide what to expect. It should work in nicely with the Cascade.
I reckon your recipe would be a ripper but the Notto might strip a bit of those hops, I'd seriously use US-05 - can be a bit of a bugger to clear sometimes, but more fitting to style IMHO.

Thanks for the advice. It's 30 EBC, so I guess the recipe is about right, quantity-wise. I think I've got a packet of S05 somewhere.

made a simalar Bitter with all Cascade and it was very nice, needed a little more maturing than most so you could get all the nice flavours from the hops

If you use s05 and want it to end up with more body, mash in the low 70s. I've mashed at 66c-68c and it finished at 1006. :? Brewed with it again and mashed at 74c, ended at 1014! :D

With regards to it clearing, it is a bugger if you don't have a fridge. However, if you have a garage, shed or conservatory it will drop completely bright along with gelatine. I have none of these so my plan is to ferment in primary for 3 weeks. In the final week, I'll add some gelatine. I'll then rack to secondary with a second addition of gelatine and leave for another week. Hopefully it will drop bright then!

Do you mean the US-05, Floyd? I gelatined up the last brew I did with that and it mostly cleared fairly quickly other than a residual haze which then took about 6 weeks to go. I'm also trying to clear some bottles before xmas and I'm leaving them outside to try to get the yeast to drop out a bit quicker. That's S-04 though, which is pretty clumpy.
