Endless Summer Amber/Red IPA - Look ok?

Post by phatboytall » Thu Apr 21, 2011 12:16 pm

My first real attempt at trying to craft a recipe inline with the beer I want to drink (rather than just chucking stuff in and being happy whatever comes out)

Probably an "IPA" over here, probably just a "Pale Ale" in the US.

Really hoping for an Amber/Red sunset colour to this one, the right malts for that?
Hops probably slightly above a Sierra Nevada Pale Ale, not quite Hophead, but close :-D

Created in Brewpal on my Iphone
23 Litres
4000g Maris Otter
300g Cara Red (not used this before, presumably it gives a nice red colour? :D )
200g Crystal
100g Torrified Wheat

Hops
30g Cascade 60mins
30g Amarillo 15mins
30g Cascade 15mins
60g Cascade flame out, sitr every 5mins for 20mins

Yeast US-05
Target OG 1.056
Target FG 1.013
ABV 5.6%
85% Efficiency (high but thats what i've achieved on my last 2 brews :D will still be happy if i come in under this)

Feedback greatly recieved!!
I am not a Beer expert.....thats exactly the point.

What colour crystal are you using? That is going to change your end result too. I would add a couple of ounces of roasted barley late in the mash to really get some colour going. There will be differing opinions I am sure.

What you have there we would call an American Amber. It's basicly an American Pale Ale with more crystal malt thrown in and a darker color. That beer should work out just fine for you, it will taste like a Sierra Nevada but with more malt sweetness, maybe some caramel from the crystal depending on exactly what type you use. You are correct though when you say it's not an IPA, we generally start those around 1.060 to 1.065 or so (some brewers are going even higher but I'm not really a big fan of Imperial or double IPA's myself). I guess the other thing you can do is dry hop with an ounce or so of Cascade or Amarillo. I like the effect you get hop bursting, that's why I like Dogfish Head 60 minute IPA so much. The beer is really not all that bitter but the hop flavor is massive, I think it's really nice. I would like to make a "Dogfish Head 45" some time. Do a pale ale with an O.G. of about 1.050 then hop burst the hell out of it, I think it could be really good as well as being a decent quaffing beer.
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)
