First Wheat beer

On a whim i bought some WB-06 yeast around 6 months ago, i have finally got round to using it and planning to do a wheat beer in the morning.
It occured to me that i have never actually tried a wheat beer of any description :oops: so i am a little in the dark as to what to aim for.
A search around the site and a check on supplies in stock has given me this recipe

18 Litre brew length
Wheat Malt 1600g
Lager Malt 1600g
Flaked oats 400g

90 Min mash at 67c

Hallertauer Mittlefruh 30g 90 mins
Crushed corriander seeds 20g 10 mins
2 x oranges 10 mins
Any advice appreciated for this recipe :)

Do you want a German style wiezen (such as Weihanstephan, Paulaner) or a Belgian style wit (e.g. Hoegaarden)?

You shoul be able to get at least one of those wiezens at Sainsbury's and obviously Hoe is available everywhere.

Maybe some research first!

Thanks for replying dave-o yes i agree some research would have been helpfull but i cracked on regardless :oops: i have the first runnings on at the moment from the mash as described would you stick with my original schedule or ammend it in any way bearing in mind i have no other lager style hops other than bobek :)

Personally, I think you'll get more of a Belgian wit style with the orange and coriander included; which is no bad thing. For a German style leave those out. As for hops, again, I'd leave it as is. Wheat beer isn't really about hops, more the yeast etc. I can see no reason why you shouldn't produce a jolly decent brew with that recipe. Other than that, I'd suggest next time going for one of the liquid wheat yeasts. I've previously done a wheat with WB-06, and am now drinking one made with WLP300. The difference, in my opinion, is marked.

Yeah it'll be fine. No need for late hops, although i do really like a bit of late bobek in a light wheat beer. Perhaps 20g for 5 mins if you want to do that.

Thanks for that will keep it the same but probably add the bobek i do like my styrians :)

Last time i used this kind mashing times ( first time total was 8h )

Wheat malted 2kg
Pils 1,5kg
Munich 1 kg

37°c 15 min
50°c 20 min
63°c 45 min
72°c 20 min
77°c 15 min

Boil 1,5h
