Both methods would require pasteurisation but nothing as vigorous as a boil so the fruit wouldn't end up so battered. I'm not sure if bananas contain pectin, but not boiling them would also prevent the release of pectin. Pectin being a major clouding agent, of course.
I'm all for this, by the way! Perhaps not 23l if you're not wholly convinced, though.

Bananas contain huge amounts of pectin, hence they are suggested as a food when you have the squits so that the pectin can bind you up a bit.

I wish i'd taken a pic of my banana sludge beer. It wouldn't be the nice type of dreams you'd be having!
