Ginger Ale

Hi folks
not been on for a while and need a bit of advice please if anyone can help, I thought I would have a go at a very basic Ginger Ale:
200g grated ginger
300g caster sugar
2 tbls honey
juice 1 lemon
1/4 lime
boiled together for about 30mins and then cooled and made up in a 1 gal demi, not sure what it will end up like just thought I would have a little experiment. My main concern is that I used dried bread yeast as my beer yeast was out of date :( what are the implications of doing this? I used about 1 tsp :? and any comment on the recipe negative or positive would be good.
