Cupboard clean out brew ideas

Hi folks,

I have in addition to M.O. ,

S33 yeast
Caramalt
chocolate malt
dark candy sugar
First gold & Aurora hops

I was thinking some kind of Belgian hoppy ale thing.

Any suggestions?

With S33 as your only yeast, i can't see a Belgian working very well. S33 has quite low attenuation so will end quite sweet, where belgian ales are usually dry.

I'd say either go for a hoppy English ale or get another yeast!
