I've got 50g of Centennial that I am planning on using as late hops, 25g @15mins and 25g post boil.
The question is, what to use as a bittering hop? and approx how much? I've got:-
Boadicea, Target, Fuggles, Northdown, Willamette, Bobek, EKG, Challenger.
I was also thinking of either just using pale malt or possibly a bit of crystal malt.
I also have some chocolate and black malt but I'm not sure whether either of them would go well with the Centennial. (not used Centennial before)
Any thoughts?

I would/have used Challenger or Target for bittering with the Centennial. They seem to partner pretty well.
As for specialty malts, it's all about the flavour you are after. Look for a combination of maltiness that suits your pallet. It kind of falls into the "how long is a piece of string" scenario. For myself, I have a particular taste for malt but I partner that with a variety of hops to suit my mood.

I highly recommend the centennial ipa shown in the thread below. Excellent brew.

I got some warrior hops a couple of weeks ago with plans of using them in an American IPA. Warrior is indeed a good choice to pair with Centennial however since it appears as though he doesn't have any of them , then I would go with the Challenger as the bittering addition.
The pale malt with a touch of crystal will be fine for this brew,

Use the Summit late (10 min and less) as I find you can get a oniony character if used as a bittering addition. Sorachi Ace is an utter waste of time as a hop -- absolutely dreadful. I don't say that about many things.... Avoid at all costs, my friend!

Centennial is a big, grapefruity hop in my experience and I wouldn't personally use it with dark grains. Target and Challenger are both good for bittering and should work well with Centennial in a pale, either all pale or with 10% crystal will be good.
Stone Ruination is a great beer and the recipe posted above sounds superb, I brewed it as one of my first AG brews with all Centennial IIRC as I didn't have any Warrior and it was pretty good.
