First RIS Attempt

Hi Guys!

I have wanted to brew an Imperial Stout for a while and have been inspired by some of the New Years Day antics of forum members so I finally got round to putting together a recipe. I have based this on the Tricentennial Stout recipe in "Brewing Classic Styles" but added a few extras to use up some of what I have.

I have assumed a 60% efficiency for the purposes of calculations but to be honest I have never accurately measured the efficiency I get - what will be will be...

The FG is 7 points lower than in the Tricentennial recipe and the IBUs are also lower at 89.4 rather than 100. As I BIAB I will mash half the MO with the wheat first and then use the resulting wort to mash the other half of the MO and the speciality grains - I read about this method in Mosher's Radical Brewing I think.

I wanted to brew this at the weekend but probably won't have the yeast in time so will wait a week so that I can make up a decent starter.

Anyway here is the recipe:

RIS Attempt 1 (Imperial Stout)

Original Gravity (OG): 1.099 (°P): 23.5
Final Gravity (FG): 1.030 (°P): 7.6
Alcohol (ABV): 9.08 %
Colour (SRM): 79.5 (EBC): 156.5
Bitterness (IBU): 89.8 (Average)

74.07% Maris Otter Malt
9.26% Wheat Malt
4.63% Chocolate
3.7% Roasted Barley
3.7% Roasted Wheat
2.78% Black Malt
1.85% Special-B

3.2 g/L Northern Brewer (9% Alpha) @ 60 Minutes (Boil)
1.8 g/L Northern Brewer (9% Alpha) @ 30 Minutes (Boil)
1.3 g/L Celeia (4% Alpha) @ 15 Minutes (Boil)
2.5 g/L East Kent Golding (5.2% Alpha) @ 15 Minutes (Boil)
1.8 g/L East Kent Golding (5.2% Alpha) @ 3 Minutes (Boil)
2.5 g/L Celeia (4% Alpha) @ 7 Days (Dry Hop)


Single step Infusion at 66°C for 90 Minutes. Boil for 60 Minutes

Fermented at 20°C with WLP004 - Irish Ale

Nice one matey! Looks like a cracker! Defenitly make a decent starter! I used 500ml of wlp090 slurry and it took off like a rocket in under 5 hours! Might want to use a blow off tube instead of an air lock though! :D

Cheers LB! I did have my eye on your Brooklyn Choc Stout recipe but I thought I would try some thing myself. I will definitely add the blow off tube - I have a feeling this could get messy! :lol:
