Using-Up Recipe Porter

Hi Guys,

I've come into some odd's and ends, malt wise.. and wanting to use it up fairly shortly.

Ive got the following, and brewing 100l Batch Size:
13kg Munich, 5kg pale wheat, pale crystal and chocolate, 2kg roasted rye.

They dont all need to be used together (this isn't ready steady cook!) and I probably might in chuck the rye as im not too fond of that flavour.

I'm thinking for a portery-stouty beer

100L @ 1.057

13kg munich
5kg wheat
3kg chocolate
2kg crystal

Bittered to 50-60 IBU's

What do we all think?

I'd say that amount of choc will be quite harsh and nasty. Unless you've had choc in that quantity before and you like it.

No, I have used a combination of black and brown (1.8kg and 5.4kg) - never really used chocolate prior to this brew.

So what if I tone down the chocolate to a more typical modern standard porter quantity. Keeping the muninch and wheat, and using a hef. yeast for that bananary flavour. Probably Munich yeast, I have 5 sachets in the freezer.

Or does that sound grim?

Well it's sounding more like a roasty Dunkel than a Porter, but as long as there's not too high a propertion of Choc it'll probably be nice.
