Simcoe & Chinnok

Hi All,


I have got my hands on a 100grms of chinook and simcoe as I have never used these before I was looking for a recipe. I like hoppy beers can any one sugest what style beer/recipe they would be good for?

Why not do a simple Blonde beer with them?
Something like
80-85% Lager Malt
5-10% Wheat Malt
10% Carapils (or other light cara/crystal)

Then just do 50:50 - Simcoe:Chinook for all your additions, both hops are very nice dry so save 20g of each to dry hop with, if you keep the OG at 1036-ish you should be able to only use about 50g of each and have a nice light session ale :)
I was just having my own Chinook Blonde idea so its not so far off what I'd brew myself.

Both those hop varieties are heavily used in American IPA's. Stone uses alot of Chinook and Dogfish Head uses Simcoe (and they are both making money hand over fist). I'm not personally real crazy about Chinook because I find it harsh but what the hell do I know? On the other hand, I like Simcoe alot, it has a very distintive taste (as does Chinook actually). Besides American IPA's, you can use either or both in APA's, American Ambers as well as American Brown ales. Simcoe is a low cohumolone hop and does just a bit better with high carbonate/sulfate water where as you may get some harshness from Chinook, your milage may vary. :D
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)
