Hi guys i am about to turn my hand to blonde/golden ales to try and win over friends and family seems hop bomb ipa is not to their liking [-X so the following recipes is what i have come up with any comments are most welcome as i have not brewed this style before and wouldnt like to offend any delicate tennants calibrated taste buds but at the same time would like to stimulate my own =P~

Golden Galaxy (Blonde Ale)

Original Gravity (OG): 1.048 (°P): 11.9
Final Gravity (FG): 1.010 (°P): 2.6
Alcohol (ABV): 4.97 %
Colour (SRM): 5.0 (EBC): 9.8
Bitterness (IBU): 24.9 (Average)

77% Pilsner
10% Vienna
5% Wheat Malt
3% Caramunich I
3% Carapils (Dextrine)
2% Acidulated Malt

0.4 g/L Magnum (12.5% Alpha) @ 60 Minutes (Boil)
1.1 g/L Galaxy (13.4% Alpha) @ 10 Minutes (Boil)
1.3 g/L Galaxy (13.4% Alpha) @ 0 Minutes (Aroma)


Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes

Just a couple of things to think about. First of all, anytime you have alot of pils malt in a recipe, it's really best to boil for 90 minutes (and a rolling boil by the way). You risk getting alot of DMS in the finished product otherwise (some is ok and in fact desirable but alot will taste like canned corn, not so good). Secondly, and especially if you are looking to serve the beer to the non-initiated, I would use a German noble hope for flavor and aroma rather than some of the higher alpha stuff. Anyhow, I enjoy a simple, blonde ale once in awhile although to tell you the truth, eventually I'll get a hankering for something a bit more agressive. Right now I have three German lagers on tap, none of which have alot of hop action going on. The Helles is almost out (and it's easily the best one I have ever made, I really like the beer alot) and to tell you the truth, I can't wait to put my CAP on line which I hopped the hell out of.

By the way, I have never used the yeast strain you mention, would you can to comment on your experience with it?
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

if your using uk lager malt your ok as it is normally fully modified(fawcetts warminster crisp muntons),however if your using a continental or american grain (ie wyermann) barleywater is spot on

i use lager malt from warminster and ive used fawcetts on my home brews and never had dms issues, but you will if you use partially modified grain

I've done a few similar for the same reasons and got on grand with them, different hops and grain bill, but......
What I'm getting at, if you keep a simple grain bill and produce a light colour, hop lightly ( low to mid 20's) it's very hard to offend anyone.
I hopped with magnum like yourself for bittering, then late with tettnang, colombus and rakau (3 different single hopped beers)
They all went down well with the Colombus being the most popular, I think I even had that one up to 30 IBU's :shock:

Yes I am using uk lager malt but it wasn't in the fermentables list on the program I use

I sort of loosely based my recipes on American blonde rather than euro style also I had a couple of bottles of golden hen a while back even my wife found it agreeable and it is hopped with galaxy

I suppose what I am trying to identify is what sort of taste comes from the hops also that the flavour is not to intense with the hopping rate I have used also I have not used the malts in this recipies before so really quite a bit of experimentation

I have used 090 before but didn't make a starter and pitched it direct it took a while to get started I kind of panicked and pitched a pack of 05 but fermentation started 2 hours later doh fermented out clean and dropped clear in a reasonable time so going to give it another go and split into 5
And use starters

3.500 kg of UK Lager Malt
    3.500 kg of "new batch" added to inventory 6 Feb 2012
 
1.000 kg of German Vienna Malt
150 g of US Carapils Malt
150 g of UK Wheat Malt
100 g of German CaraMunich I
    100 g of "new batch" added to inventory 6 Feb 2012
 
100 g of German Sauer(Acid) Malt

 Boiling

12 g of Magnum
    



35 g of Summer (10 Min From End)
    
 
Boil the wort for a total of 60 minutes.

At 'turn off' add the following hops.

35 g of Summer
I used wlp090 it was left in the fermenter for
3 weeks then racked into bottling bucket with 130g of table sugar so should be decently lively total of 45 bottles
I dont know if anyone else has tried summer hops but my first impression is bland but the beer was room temp
At bottling and not too much residual co2 so perhaps that was adding to the impression of blandness


The colour is a nice deep golden colour so spot on
It finished up a bit dry though .009 I may try and up the mash temp a bit for
My next batch would
Adding more carapils help with that? I didn't detect much in the way of malty sweetness

My golden blondies I use straight base ale malt - Golden Promise or Halcyon - and UK hops, particularly Challenger with a bit of Slovenian Goldings or Bobek in the finish. The ale malt gives a nice rich malty backbone.

They look like successful recipes.
Secondary FV: As yet unnamed Weizenbock ~7%
Bulk aging: Soodo: Grocery store grape juice wine experiment.
Drinking: Evan Williams bourbon, Dewar's Scotch (white label), VO Canadian whisky. Various Sam Adams beers.

Looks good buddy similar colour to mine kind of happy with mine now I have two bags of lager malt only ordered one but it got lost in the post then arrived with its replacement so kind of stuck with around 45k of lager malt oh well!!!


I am going to try some uk hops and also some
Of the noble types all I need is some more spare time
