Delta Bitter

I hope to have a go at a fairly standard bitter this weekend. I have a load of Delta hops in the stores that I could do with getting through - does anyone think I could squeeze any more in here or would it start to take away from the beer if I got too heavy handed with the hops?



Delta Bitter (Standard/Ordinary Bitter)

Brew length: 25l
Original Gravity (OG): 1.042 (°P): 10.5
Final Gravity (FG): 1.011 (°P): 2.8
Alcohol (ABV): 4.13 %
Colour (SRM): 11.8 (EBC): 23.3
Bitterness (IBU): 34.8 (Average)

87.91% Pale Malt
7.69% Crystal
3.3% Torrified Wheat
1.1% Black Malt

25g Celeia (4% Alpha) @ 75 Minutes (Boil)
28g Fuggles (5.2% Alpha) @ 75 Minutes (Boil)
30g Delta (5% Alpha) @ 10 Minutes (Boil)
30g Fuggles (5.2% Alpha) @ 5 Minutes (Boil)
20g Delta (5% Alpha) @ 0 Minutes (Aroma)


Single step Infusion at 66°C for 90 Minutes. Boil for 75 Minutes

Fermented at 18°C with WLP037 - Yorkshire Square Ale (if the out of date vial makes a starter...)

Sounds like a nce brew but for me I would at least double the flame out hops. Also your not giving that yeast much of a chance to grow, ferment then drop. I would think you need to treat it as a slant, give it a couple of steps and that is going to take longer than this weekend? I am just drinking a Galaxy single hop brew with this yeast and I love it!

Cheers Rob. I was wondering about the yeast. I might have to take an afternoon off work during the week to do the brew so I have more time to step the starter up.
