I have simcoe. was wondering if maybe these as a stand alone in dry hop?

Right this is on the cards for the next brew day, in about 3 weeks or so i guess.

i have scaled up a little to 25 litres as opposed the the initial 20.

recipe looks like this.

Fermentables
6300,00 gm Pale Malt, Maris Otter
300,00 gm Cara-Pils/Dextrine
300,00 gm Wheat, Torrified


Hops


58,15 gm Cascade [6,00 %] (15 min) Hops 15,5 IBU
58,20 gm Centennial [13,50 %] (15 min) Hops 31,3 IBU
41,54 gm Amarillo Gold [12,80 %] (5 min) Hops 8,5 IBU
38,00 gm Amarillo Gold [12,80 %] (20 min) (Aroma Hop-Steep) Hops -


1 Pkgs California Ale (White Labs #WLP001) Yeast-Ale 2 litre starter

Dry hop

25,00 gm Amarillo Gold [12,80 %] (Dry Hop 5 days) Hops -

Beer Profile

Est Original Gravity: 1,065 SG
Measured Original Gravity: 1,010 SG
Est Final Gravity: 1,015 SG Measured Final Gravity: 1,005 SG
Estimated Alcohol by Vol: 6,60 % Actual Alcohol by Vol: 0,65 %
Bitterness: 55,3 IBU


I am working roughly om 1l wort pr 100 g hops, so in this case i will need to add 2.3 litres on top of my normal losses in order to get somewhere near the 25 litres.

Since getting my gas set up i have been struggling a little in getting decent control of the boil. the dial has no way of being marked so it is very much " by eye"
in addition the weather has a lot to say I brew in the garage and we are stil only just over 10 degrees. When its cold out i need to have the gas on higher in order to maintain a bol. i am as a rule about 1-1.5 litres low on volume, but always a little higher on OG.

Questions

Having never brewed anything like this before is the amount in dry hop enough and should i maybe let it stand longer than 5 days?

Some of this will be bottles, some will be kegged.

I am wondering if i should maybe up the volume to 30-35 litres and split it between 2 FV, one with say amarillo as dry hop and the other with Simcoe or nothing.

what is the consencous of opinion here guys?

Does anyone else find with heavy dry hopping that you get a hop haze which is not like yeast suspension. Even on the shelf weeks it doesn't really settle out properly.

Big time.Nothing you can do about it.Embrace the haze.
A lot of the big hoppy American beers have the same issue.
