hello all going to brew a TTL on friday night after work again. hoping to achieve full volume and bang on gravity with this. uisng the recipe out of the brew your own real ale book. but instead of styrian goldings i will use my "dusty" styrian dana hops. and maybe a good wedge of them at the end of the boil for a 30 min steep. aint going to use over 100 grams though for the reason i want to get to grips with volumes now and that before i go back to using a rook of hops.. right here goes off to the shed for my malts to weigh out.

got us-05, nottingham, windsor. what you recommend. is there anything you would change with the recipe out the book?

Of those three I would probably use nottingham as it will give you the best attenuation. I am going to do a TTL in the next week and I am using wyeast 1469.
I've been thinking about how to get the toffee notes that you get in TTL and got some good tips in this thread click! on boiling a couple of litres of first runnings on the stove and reducing it down to a paste then adding it back to the main boil.
Most people agree that the malt they use is golden promise and that's all, but some recipes I've seen add a touch of crystal. Maybe you don't need any if you do the side boil reduction thing. I think some of those malty flavours are coming from the yeast which most agree is wyeast 1469.
I'm not sure which styrian goldings to use but some one told me it's Savinjski. I've never used Dana hops, but I've got a bag of bobek in the freezer so I'm going to try them first and see how it turns out. You mentioned using a good wedge of hops for a 30 min steep; I would go easy on late additions if you're trying to get close to the real thing as Graham does in BYOBRA.

i have never used dana either. bobek are as good mate there awesome i love them, you just cant seem to buy just styrian goldings anymore there seems to be a few different ones now dont there. i aint got any crystal malt. i just have wheat and caramalt. should i add some... i have tried that boiling the first runnings with good results to give it a go. let us know how you get on.... i aint used a liquid yeast for ages i will use nottingham and keep as close to the recipe as i can then. even though that aussie recipe you mentioned as a good amount at 0mins steep?
