Durham Brewery Temptation Russian Imperial Stout recipe/clon

Post by DC » Fri Sep 14, 2012 8:10 am

Hi all, after recently sampling several beers produced by the Durham Brewery I have decided that their Temptation Imperial Russian Stout 10% is now my new favourite beer. But with it retailing at prices varying from £3.69 to £4.19 for a 500ml bottle it’s not cheap. So I have decided to have a go at making a clone of it, I have copied the tasting notes from their website for the imperial stout which list some of the ingredients but I am assuming not all of them. Just wondering if 1st off any of you guys have tasted Temptation Imperial Russian Stout? But more importantly does anyone know of an all grain recipe for it? I have tried lots of different stouts and a few of the stronger ones and this has to be the best of the stronger ones so far, it’s a sweet tasting stout which is what I prefer. Really desperate to try and emulate this recipe or get as close as possible.

Temptation Imperial Russian Stout 10% (Durham Brewery)
Tasting Notes
Crystal malt, amber malt, black malt and roast barley in generous quantities generate a deep black colour and flavours to match. Roast bitterness, coffee and liquorice notes combine in a velvety rich malt texture. A full and sweetish body is balanced by traditional Goldings hops.

Hi all, after having no luck finding a clone recipe for the Temptation Stout I decide to contact the Durham Brewery directly and ask for some hints/tips for cloning their stout and got this reply
You will need a lot of malt, about twice as much as for a mid strenght
beer of around 5% abv. For instance, we us 300kg malt in 10 barrels of
5% and 600kg in 9 to 10 barrels of Temptation. You will also need double
the amount of yeast. Use pale, brown, amber, roast barley and possibly
some crystal. Use English hops, goldings and fuggles. Sweetness is easy
because the final gravity is high when using so much malt.

Temptation is made from original 19C recipes of Russian stout so try
looking for authentic recipes for more clues.
A little more research for authentic recipes then I will have a go at brewing my own version
