120L crystal instead of 55L?

Post by BarryNL » Tue May 08, 2007 9:06 am

I have a recipe which calls for 55L crystal malt but the only crystal I can get is 120L. Would it be wise to reduce the amount of crystal. I don't think colour will be an issue as the recipe also has chocolate and black in which will dominate the colouring, but does 120L have a stronger/different flavour to 55L?

Yes, it's more raisin-ey and less caramelly.

I think I'm getting confused anyway - I think my crystal is actually 120 EBC, which is probably in the region of 55L.
