Brewer's Gold Seal

Post by DaveyT » Wed Nov 28, 2012 11:35 pm

Hello
At some point before the New Year I aim to brew this beer. I'm not sure when so I need to be ready to hit the ground running.
I'm using my two FV method and thinking about a base brew of Crouch Vale's Brewer's Gold clone and a dark brown/black version in the other.
So the base:
14l at 1.040 OG, 4%
DME 1kg (62.5%)
WME 400g (25%)
Crystal malt 100g (6.2%)
CaraPils 100g (6.2%)

60 min B Gold 20g
10 min B Gold 40g
(or something similar for a 15min boil)

7l will stay like this, but 7l will become:
Brewer's Gold Seal:
Molasses 100g (10%)
Chocolate malt 100g (10%)

The last two I'll boil for 15min and add before pitching the yeast.
The original idea came from wanting to produce a weaker version of Riggwelter from Norm's recipe. That's why I've got 5% crystal and 10% choc malt (I think; it's a while back now and I forget). Will this create something that's not really drinkable? I want to create something dark and chewy. I have problems with my 'brown' beers as the malt never really stands out as much as I expect it until after four months aging which is a bit late, really. I was hoping choc malt would remedy this.
All thoughts welcome.

Thanks
David
