New Zealand Pale

I pointed out to my wife the other day that I still have a day's leave to take before the end of the year and fully expected to have a day's Christmas shopping scheduled in but no! - "Why don't you do a brew?" she said... :shock:

So I have put the following recipe together:

New Zealand IPA

Original Gravity (OG): 1.058 (°P): 14.3
Final Gravity (FG): 1.015 (°P): 3.8
Alcohol (ABV): 5.70 %
Colour (SRM): 4.1 (EBC): 8.0
Bitterness (IBU): 39.3 (Tinseth)

97.14% Pale Malt
2.86% Wheat Malt

20g Rakau (12.1% Alpha) @ 60 Minutes (First Wort)
50g Riwaka (5.4% Alpha) @ 10 Minutes (Boil)
50g Rakau (12.1% Alpha) @ 5 Minutes (Boil)
20g Riwaka (5.4% Alpha) @ 5 Minutes (Boil)
50g Rakau (12.1% Alpha) @ 0 Minutes (Aroma)
30g Rakau Dry Hop 5 days
30g Riwaka Dry Hop 5 days

Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes

Fermented at 20°C with Safale US-05

Am I making the best use of the hops here? Would I be better spreading the 10 and 5min additions out a bit...?

Looks good to me. You pretty much have all the bases covered! What you don't hit in the boil will be healthily covered by the dry hopping!

I've not used Rakau but a late hopped Riwaka Pale I made was awesome, from a personal perspective I like a little pale crystal or caramalt in there but it looks good.
Are the Riwaka a recent purchase... if so where did you get them? I've not been able to find any to make it again :evil:

This one went on the back-burner. The riwaka were the remains of a bag that had already been open for some time and although they had been stored in the freezer they had a distinctly cheesy aroma when I checked them so in the bin they went. I brewed an american pale instead...
