Which Yeast?

I'm brewing a slightly edited beer from GW's book, I'm unsure what yeast to add..

I have Gervin English Ale or Safale us-05, would one of those work or should I wait until tomorrow and buy a pack of Safale 04?

I would go with the Gervin.

You are looking for ~83% apparent attenuation there, which is high, although the 7.8% simple sugar will help. US05 and Nottingham (re-packed as Gervin?) are both high attenuators, but S04 won't get you there. Given the lack of late hops, the classic Notty trick of muting the hops won't be much of an issue, and US05, while great for a hoppy beer, can be a bitch to floc and clear. So I guess this is a long winded way of saying, go the Gervin.

I'd be interested to hear how this beer turns out. My current interest is low gravity beers and this fits the bill but at 1.006 FG I would have thought it might be a bit thin especially with the sugar addition. But maybe I have been thinking too much about getting body into a low strength beer... :-k

That is a fairly low gravity beer, I would think that you would be better served with a sachet of Windsor yeast as your OG is only 1.036 You don't want to end up too thin do you :-k

The recipe lists target final gravity as 1.006. Windsor wouldn't get there in a million years.

What is listed in the recipe doesn't always make the best tasting beer =D> =D> Only a suggestion :D

That's true, but I was working on the assumption the OP wanted the result to be as close as possible to the recipe.
