I think that's good advice, generally speaking, however I've learned with Cascade especially, 30-40 minutes is best. You get some bitterness and some exquisite marmalady/citrusy flavor (more akin to better UK varieties) without the overwhelming grapefruit and pine resin stuff (which is an immediate giveaway of American hops). I think this recipe looks very good indeed.
Yes on using the goldings instead of cascade. 1.056 instead of 1.059 is not enough to worry about.Dave S wrote:I recently did an IPA using MO and small amount of Crystal, fuggles and EKG with some extra EKG at 10 mins to 50 IBU.
