Wheat Beer recipe wanted

I have only brewed English style pale ales, bitters and stouts, but with Summer (hopefully) on the horizon, I want to try my hand at a wheat beer. I tend to prefer the German style wheat beers, but basically I am looking for recomendations for a simple, all grain recipe. Any suggestions?

Generally speaking, though, you could simply mix wheat malt and regular pale malt 50%/50% or 66%/33%. Consider an extra lengthy mash, or a multi-step mash, and an extra lengthy boil for maximum fermentability. Use German noble hops (or your English ones Goldings and Fuggles are fine, too) for relatively low IBU overall, about 2/3 the weight in the full boil, and the remaining 1/3 for aroma around 15 minutes remaining. For best results, ferment with a dedicated wheat beer yeast. Skip all clarifying agents and/or filtration, because some haziness is desired.

Thanks for the excellent information. What wheat yeast would recommend (preferably a dried yeast for this first effort)? I've trawled the forum and found, shall we say, a diversity of opinion!

I effing loved the Mauri Weiss. Still not sold in the US, but Jim's member AndyCo generously mailed me a packet.

Safbrew WB-06 is pretty good too, believed to be a dried version of a historic Weihenstephan wheat strain. No matter what, though, this is one style where a quality liquid yeast has noticeable advantages.

Try this recipe from Dave o. I've brewed it a few times and its simple and a great drink.
