Interesting recipe - I'll be trying this. I had a nightmare with a ginger beer I made - tasted so bad I thought I had an infection. My brother loved them though - polished off the whole case...

I used fresh ginger in the primary - bad idea - I prefer your idea of dried in the secondary.

Just seeing your post Pete. Glad this has interested you. I used to add it to the boil mainly. I think it soon gets lost though when primary fermentation kicks off.

I added the stem ginger to a week ago. Fermentation had ceased so i chopped up the ginger (roughly), put it in a pan with the syrup and whizzed it with my had blender. I didn't liquidize it... it was more like a pulp. I then brought to the boil then switched off the heat. 5 min later I added to the fermenter. Dry hops were added around 3 days ago. Tastes so far are VERY promising. I can not wait to start drinking this one. Will Keg next wknd with gelatine and drink the following week.

Kegged this last night and decided not to add gelatin... because it's so damn delicious! I don't want to wait a week for it to clear. This couldn't have turned out better. F.G of 1.012 so a nice malty backbone. The Szechuan Pepper is incredible - such a unique flavour. It's aromatic, citrusy and fruity. Brilliant combo. The stem ginger is there too - perfect quantity. These two ingredients work so well together. The orange zest notes from the First Gold is just the cherry on the top. Absolutely love it. Hope someone else will give Szechuan Pepper a go now!

Will do! It'll probably be next weekend that it goes on, assuming the pepper arrives in time. I can almost taste it already, lightly chilled, out on the patio in the shade, yum!

Just noticed this thread, Floyd. Nice work, very creative, it sounds amazing! I don't always love ginger in my beer, it can so easily become overpowering in my opinion, but I'm imagining your spice combo with somewhat reduced ginger and a spicy Belgian yeast in a dark strong ale. Mmmm...

I've tried this in a turbo cider. Took 20 min to put together so no loss if I'm not keen on it.
I used mango too. If it works out I might try the mango, ginger and pepper in a saison.
Just waiting for it to condition.
