Simple Saison (with Elderflower?)

Post by Jocky » Fri Jul 05, 2013 3:16 pm

With the hot weather I've decided to brew a saison. First time so I wanted to keep it quite simple, and I was thinking:

90% Pilsner malt
10% Wheat malt

Saaz to 30IBU with hops split 50% @ 60 min, 30% @ 10 min, 20% @ flameout

Ferment with Wyeast 3711 French Saison (or possibly Danstar Belle Saison).

Thoughts?

One idea I had was whether to add a little elderflower at 10 min and flame out?
Or otherwise add it in secondary, having hot steeped it, which means I can add it to taste?

I've not used elderflowers before.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

I completed an Elderflower Blonde last year. Using Saison 3 yeast and I added 200g of dried Elderflower at flame out and Wow, it was amazing. It didn't turn out a session beer, but it was mighty tasty.....and the Elderflower came through lovely, the Yeast gave the Ale a real thick full mouth feel. Deffo, will do that again!! Good luck with yours....
