Hi guys,

Looking to brew this weekend and I fancy using my nelson sauvin hops.

I really like Williams bros bird's and bees which, from their website, combines ns, amarillo and cascade. The recipe also has elderflower and lemon zest in it but I will be discounting those additions at this time.

I am not planning to completely clone the beer but have used it as a basis due to the hops used.

My extract recipe is as follows:

2.5kg of light dme

Amarillo 10.9% 10g at 10 minutes
Cascade 7.2% 10g at 10 minutes
Nelson sauvin 10.9% 10g at 10 minutes

Amarillo 10.9% 25g at 5 minutes
Cascade 7.2% 25g at 5 minutes
Nelson sauvin 10.9% 25g at 5 minutes.

US 05 Yeast

This will get me, on a 23l volume, an og of 1.041 and 33IBU.

I plan to dry hop it and was wondering if I should dry hop with the three hops or if I should only use one. If only one, which one would be best to accentuate the flavour of the beer without overpowering it.

Any thoughts are very welcome.

I've made a very very similar AG version of that beer. about 1043, 35 IBU using NS, Cascade and Amarillo. In fact I've made it 3 times only changing the yeast and ratio of hops. It's a top beer. NS is a nice hop but not on it's own. Blended with American or other NZ hops it works very well. I did also dry hop it with all three hops.
It was very well received (20L gone in 30min) by some rural french people who had never tasted anything like it before.
