Saison sought

Hello
Due to a this recent set-back:
viewtopic.php?f=24&t=60268&p=644736#p644736
I'm looking for something that will drink easily and taste, well, nice. I like my beers pretty small as I have young kids who need attention at wrong o'clock in the morning. I extract brew but have started branching out with my grains. I have:
DME and WME
Carapils
crystal malt
CaraMunch
Biscuit malt
oat malt
Choc/black patent malts and roast barley
Hops: Flyer, EKG, Cascade, Centenniel and smidgens of Progress and N Sauvin.
I was going to do 14l and split into three FVs: one untouched, one with mango and ginger and one with figs (and maybe fennel), but I don't feel confident after the last brew.
Thanks in advance.

Cheers
David
