In terms of quantities, I use a quarter of a packet for my 5 litre plastic water bottle FVs. Works fine.
Evolution didn't end with us growing thumbs.

That would leave a lot of spare yeast. I could mix it together and chuck it in one brew, see what happens. I think I've got an old stout kit somewhere I don't mind potentially wasting.

I'll probably get shot down for this (or at the very least discredited as a sham home brewer), but I put the remains in tiny Tupperware boxes. I sterilise them first, the put the powder in and label them. I store them in the fridge until I need them. I've used yeast from these boxes without any ill effects. I'm vastly increasing the risk of infection, but it hasn't happened yet.

I'd just cust the corner of the pack with scissors. Use 1/5-1/3 for each brew, then seal with sellotape and store in the fridge.

IMHO it seems a bit of a waste to use rest in 1 mix.

That's all the sanitation you need. Remember, single-cell contaminants don't have legs nor wings. The only way they can get inside those packets is if you do something to put them there. All these other complicated solutions--though I'm sure can work too if you're really careful--also supply numerous new vectors for contamination. Keep it simple.

If dried yeast was expensive I'd agree it's a waste. For a one off I'd rather experiment.
