First Time with Citra

Post by NeedsMoreHops » Mon Oct 14, 2013 1:03 pm

Got my first citra brew on this weekend. I suspect might have under-hopped it with 10g bittering, 10g 10 mins, 10g 5 mins then 10g 30 min steep @80, but time will tell. I will probably dry hop half the batch with another 10g.
Quite excited about the smell coming out of the FV but then realised I am losing all my hop aroma. AARRGGH.

Dry hop all of it with 30g at least, you'll thank me later :D .

How much you brewing?

for 20 litres I use almost 10x that amount for a IIPA, especially the dry hop

If your budget allows, 100g of pellets for dry hopping.

Apologies I forgot to add that this was a 20L brew. My last high alpha brew (apollo) was initially quite harsh using a full 100g and I wanted this one to be ready to go sooner. I was mistakenly equating AA % with flavour/aroma and in hindsight I should have probably added only late edition hops and more of them. The bittering hops were FWH so will hopefully add some flavour as well. From the suggestion so far I will try a sample towards the end of fermentation and proceed from there, possible using the rest dry

Citra is great in the cornie. I'd not panic and taste when you keg it. You can easily rectify by dry hopping. Don't use less than 50g if you aren't using cornies you have an earlier call to make!

How strong was it?

If it's a lower abv, simple malt bill then you should get a reasonably idea of the taste as citra is a potent hop, but as said definitely dry hop it.

I use about 100g of citra hops for boil bittering/flavouring/aroma a 4% hoppy brew and another 50g or so for dry hop

What kind of ABV are you finishing at?

Another point about citra is that it can taste astringent. Some commercial brews eg Brodie's are too thin and dry and the citra can be astringenc. I find using say 150 -200g of citra late hopped and dry hopped in a blonde 5-/- brew with around 200g carapils to help the mouthfeel works really well

This was purely pale malt (MO) and should end up around the 4% mark. If I feel inclined to do so, I might experiment and split this up into gallon demijhons and apply a range of dry hoppings. Although from what has been said, dumping the remaining 60g into the secondary (or keg) might win the day :D

ok if you are at only 4% ABV then 60G dry hop should be fine. Are they pellet or leaf/whole hops?

if leaf / whole I strongly recommend blitzing them into a slurry with a little cooled boiled water before dry hopping, you get a lot more flavour out of them.

I just finished an 8% IIPA that got 150G dry hop

These are whole hops. Good idea to blitz them up to get the most out of them. It is going to seem like an age before this one is ready, it is only the thought of my next pale ale brew day on Friday will help keep my mind off it :-)
