Hello All,
I am new to your forum and have been brewing some really tasty hoppy pale ales, but they lack the malty depth that I am looking for - so does anyone have any good recipes for a really good malty pale ale with plenty of hoppy flavours or malty ales that can withstand a good bashing of hops please? I have been using 4kg maris otter 900g wheat and 500g carapils with a whopping mix of around 300g of new world hops 50g of these have been added at start and the majority seeped at 80 degrees

Replace one KG of maris otter with one of munich malt.

i do a brew wich is 85% munich. safeale 04 and very neutral hops make for a grea pint.

This is my house pale recipe. When using sad-04 or other british ale yeast that doesn't over attenuate it has a really good malt/hop balance.
UK Pale Ale Malt 3.447 kg 79.9 % 3.6 In Mash/Steeped
German Caramel Pils 0.345 kg 8.0 % 0.2 In Mash/Steeped
UK Wheat Malt 0.216 kg 5.0 % 0.2 In Mash/Steeped
UK Oat Malt 0.216 kg 5.0 % 0.2 In Mash/Steeped
German CaraBohemian 0.087 kg 2.0 % 1.9 In Mash/Steeped
Hops
Variety Alpha Amount IBU Form When
US Cascade 5.7 % 28 g 17.8 Loose Whole Hops First Wort Hopped
US Cascade 5.7 % 28 g 13.7 Loose Whole Hops 30 Min From End
US Chinook 13.6 % 45 g 0.0 Loose Whole Hops At turn off
Yeast
DCL S-04-SafAle
I've brewed it a bunch of times using different yeasts but I still think that S04 fermented cool is the best one for this beer!
