Tallyman's Treat

Post by Matt » Fri Nov 08, 2013 7:00 pm

I'm brewing this tonight, hoping for a gently citrussy ale with a bit of bite and a toasty amber note:

Tallyman's Treat
23L

3.5kg Marris Otter
300g home toasted amber malt
200g wheat malt

Challenger 7.7% FWH
EKG 5% 30g 15 mins
Pilgrim 11% 20g 10 mins
Pilgrim 11% 20g 5 mins
Pilgrim 11% 60g 0 mins <80ºC
Pilgrim 11% 30g dry hop secondary

Fermenting with WLP001 ranched up from a bottle of SNPA

Based on 80% eff
OG1045
FG1010
4.6%ABV
37 IBU

Nothing wrong with a tasty table beer. Looks great to me, can't wait to hear more about how it turns out!

I've been seeing Pilgrim hops in more and more beers, but haven't brewed with 'em myself yet. Have you used 'em before? What'd'ya think of 'em?

Cheers Seymour. This is their second outing, I'm new to Pilgrim. They are home grown in mine and my Dad's gardens. First brew with mine was a bit of a dud hop flavour and aroma-wise, this brew with my Dad's crop is smelling lovely - a little spicy and grapefruity. So its Dad 1, me 0

The home toasted amber is tasting good in the hydro sample I took tonight. Pretty happy so far. Will post up how it pans out.

Interesting. Well, sounds like the battle rages on. :) Despite how homegrown hops are a little less predictable, it's sure satisfying to brew with stuff you grew yourself. I wonder how your crops will compare after several more years of growth, acclimating to the different micro-climates, etc?

Yeah, very satisfying indeed. I'm going to pursue this recipe as a house pale and get some challenger and goldings plants in the spring.
