So I'm going for an oud bruin type beer! I plan on doing primary with a 'clean' with a belgian yeast, then rack to a glass carboy with either WLP665 flemish ale blend, or the Wyeast Roselare blend. At some point I will add cherries.
The recipe I'm going for is based on a few I've seen online and reading the 'Wild Brews' book (which is excellent btw)

I'll have a look and see if I've got any cara vienna or cara munich in as they are mentioned in the book, so this recipe may be subject to tweaking between now and brew day.
I've got some bourbon barrel oak chips as well so may add them in secondary as well!
