Affligem tripel

I've been brewing since April, I've got 6 ags under my belt and my last few beers I've been real impressed with. One of the main reasons I got into brewing was because I love belgian beers but they're so expensive.

Anyhow I went to my local belgian bar last night and tried a Affligem tripel. It was around 8.5% blonde! fairly dry but not the driest of beers but yet had a candy floss smell/taste to it. It was dangerously gluggable and everyone who was on my table also liked it.

By chance I'd being reading brew like a monk and was on the affligem chapter.

It gives details of a blonde recipe using pilsener malt, munich with hallertau, splat, styrian goldings hops.

There's also a table giving guidelines to tripels. Alffligem tripel is listed, OG 1.076. Abv, 8.3%, FG 1.013, colour EBC 9, bitterness 31 IBU.

I'm not a huge fan of making clones but I'd like to produce something close to this and especially develop that candy floss flavour, any ideas?

First I would look into which yeast would be similar to what affligem is using.

After quite a bit of searching I've come across this recipe.

Could it be the sweet orange peel that gives the candy floss flavour?

I have just made a blonde saison and made my own candi syrup which was golden in colour, it's still conditioning and there is no hint of flavour from the syrup. So can discount that?

5 gallons (us) 9.1 abv, 25 ibu,

13.25 lbs belgian 2 row pilsener
6 oz aromatic malt
24 oz clear candi sugar- 90 min boil
1/2oz styrian goldings@6%aa -90 min
1/2oz challenger@%8aa- 90 min
1/2oz styr goldings. 15min
1/4oz sweet orange peel. 15 min
wyeast 1214 or 1762 abbey ale yeast

Yeah for clear sugar just use table sugar or dextrose
