Hoppy Pale Ale recipe suggestion

Post by DaveGillespie » Sun Jan 05, 2014 9:13 pm

My first AG was a Hoppy Pale Ale based on Hopping Hare and turned out quite well, a nicely bitter and somewhat hop flavourful 4.5% quaffable drop. I'm planning AG #5 and would like something similar but with a touch more bitterness and more hop flavour. I'm happy enough to use the same grain bill again but I would like to use up opened bags of hops if possible. The previous recipe went like this:

23 Lites, OG 1.045
4.1kg Maris Otter
294g Wheat
20g Chocolate Malt

60 Mins - 36g First Gold (8.3%)
10 Mins - 27g Cascade (7.7%)
10 Mins - 26g EK Goldings (6.9%)
Hop stand for 20 mins @ 80 degrees 27g Cascade and 26g EK Goldings

Fermented with S-04

My store of hops looks like this, with the leftovers from this recipe and others from another:

45g Cascade - 7.7% AA
47g EK Goldings - 5.9% AA
63g First Gold - 8.3%% AA
~50g Styrian Goldings - 3.6% AA
~50g Fuggles - 5.5% AA

I also have some 80 EBC Crystal in addition to the ingredients above and yeast wise I have some S-04, NBS English Ale Yeast and NBS West Cost Ale Years from the Malt Miller. I was thinking the West Coast yeast to bring the hops forward. Any suggestions greatly appreciated.
